Where are the feeds for the odometers coming from?

I'm not sure I understand what you're asking. Something like trip odometers all based on the feed from the single vehicle odometer?
I think the answer is going to be no...

yeah, basically, or even from a gps. would like to be able to moniter between oil changes, break pad changes, transmission mileage and engine mileage, since now they're all going to be different

Yes, you could. The problem is storing the value between turn-ons, but the car's odometer does that for you. The DashDAQ has what's called "Rescale Signal/Calculator" (you install them as a software device). A rescale signal is simply a linear equation calculator (y = mx + b). m = multiplier (slope), b = offset. Normally used for something like a 0v - 5v analog input. AFR would be something like AFR = 2 * Voltage + 10.

For one of your odometers you could do Mileage = 1 * Odometer - (mileage when part was new). Do one for each part and label them appropriately.
Then you could pick a screen and put all your Odometer gauges on it for quick reference. You would just need to update the offset for that odemeter when you changed oil, brake pads or whatever. Haha, you could set the High Warning threshold to the interval you wanted for each one and have the gauge change color and/or give you an audible warning. You can even record your own... "chang the oil dumbass" or "You better be in front because you're not going to be able to stop".

If you got the GPS receiver you can monitor/log all the coordinate information but the problem would be saving it (and calculating mileage).
