Uconnect works awesome in my Magnum. But I dont think my Magnum has the room to carry a 5,000 foot spool of fiber

Most phones work well with most bluetooth headsets. Some phones only work well with a few headsets. One of the best bluetooth tranceivers is the Bluespoon ax2. Can be had for less than $30 on Amazon. Problem with it is that the mic picks up everything and not so hot in the wind.

For noise canceling there are two issues. One is the person you speaking with being able to hear you and the other is you being able to hear them. I prefer ear canal (or at least in-the-ear) headsets. Some people don't like anything stuck in their ear.

There are 2 kinds of noise cancelation. Digital and acoustic.

Digital uses a digital signal processor to filter what it determines to be noise. Problem with that is there is always some amount of clipping. This can sound less than natural on the other end.
Acoustic uses sound waves or baffles. Ribbon mic with openings on both side of the ribbon. Ambient noise comes in both openings and cancels itself on the ribbon. Your voice mainly comes in one opening.

The Etymotics ER22c is probably the second best acoustic noise canceling headset out there. The headset consists of almost nothing more than a thin boom. It's an ear canal speaker. Does quite well for wind noise using the small foam mic sock. Problem is that it's corded. (That guy at control on the TV show 24 Hours was wearing an Etymotic headset with the cord cut off). Etymotics is one of the leaders in audiology and their upscale stuff is used by a lot of professionals. By the way, they make a fine set of neutral tone ear plugs. The Etymotics ER22c can be had on Amazon for about $30. If you're looking for ear canal music headphones (35-42 db isolation) the ER4S are phenomenal.

The "gold standard" in corded, acoustic noise canceling headsets is TheBoom by UME Voice. Kind of dorky looking and a bit cumbersome but it can't be beat. No one will know you're sitting in the titty bar instead of the office. Same standing next to the trencher. They've been working on a bluetooth version for 2 years now and can't get voice quality up to their standards. About $175?

The Jawbone is very popular and probably one of the very best digital noise canceling bluetooth headsets. Must be worn correctly with the tiny sensor touching your face. It only does moderately well for wind noise. And there is a bit of that digital clipping. The earpiece that goes over your ear tends to be a bit fragile as well. $200-$300?

Do you have skillz? Can you solder very fine wire. I made a "hybrid" by grafting an Etymotics boom and mic onto a Bluespoon ax2. Also replaced the Bluespoon earspring with a Jabra eargel.

Here's my hybrid and my TheBoom.

    For corded.

Etymotics ER22c (ETY*COM). As long as you don't have a problem with ear canal speakers (they're actually way better than anything else and just take a little bit of getting comfortable with). Almost no mass or bulk. You can hear perfectly and the noise canceling is excellent. If it's REALLY loud then wear one of their ear plugs in the other ear. The 18-20db isolation ER-20 (ETY*Plugs) one is about right so you can still hear and talk to (or yell at) people around you.

If you require almost absolute noise canceling then TheBoom but it's a bit bulky and inbound hearing/volume is not as good.

If you listen to music on the job the ER4S are very impressive. 35-42db isolation depending on the tips you use and audiophile sound with suprising base for an ear canal speaker. I have the ER4P but those need a headphone amp to drive them. Not extremely portable.
