On the slow response also make sure you didn't put the foulers on the upstream 02's.....I have seen that more than a couple of times.
Did you hook the grounds up right when you put the motor in? And are they tightened down good?

They might have shorted you......but I have seen stock 6.1's that use a bunch of oil.....most of it either through the PCV or the breather tube...
