Well... that's something you usually don't think of while getting out of the overturned truck (don't ask me how I know). You hit the kill switch/fuel cutoff on the engine. And for the guy standing it up, he's a bucket operator. and besides, the truck is WRECKED. hahaha, having it roll away is not the first thing you'd think of. Good point though. if it doesn't come apart at the 5th wheel the air lines are probably still going to be hooked up just fine. and just falling over on its side isn't likely to cause any air pressure leaks either. hahahaha, last comment after it stopped was probably "well, it's up"
